It depends on how the app writes your SEO. Apps that edit Shopify's native fields (the Page title / Meta description metafields and image alt text) usually leave those values in place after uninstall. But apps that render tags through a theme app embed, a ScriptTag, or only from their own database will see those tags vanish or revert to theme defaults the moment they're removed. On uninstall Shopify also fires its app data erasure (shop/redact) webhook, so anything stored only inside the app can be deleted within about 48 hours. There is no native undo because Shopify keeps no version history for SEO fields, so a reverted tag has no 'restore previous value'.
