Check whether the same run also touched meta titles and collection descriptions, not just product descriptions.
Recover your originals. Re-import the meta-description column from a pre-change CSV export (Matrixify maps it to the global.description_tag metafield); without one, Google's live snippets still show old descriptions for a few days after a recrawl, so copy them now. The Wayback Machine's archived source (the <meta name="description"> tag) is a last resort for your key pages.
Rebuild by priority. In Search Console > Performance, find the pages earning impressions and clicks, write unique descriptions for those first (~150-160 characters, lead with the value and a reason to click) under 'Edit website SEO' (the meta description field), then request re-indexing of those URLs.
